EVERYBODY Needs a Date Night!!

I know that when I say the phrase "date night" it conjures up images of romantic dinners, movies with the hubs, and finally a quiet evening away from the kids. To moms especially...date nights are sacred!! We finally get to put full makeup on, put on a dress without snot or spit up on the shoulder, and kiss our husbands for longer than one second!! HA!

But, lately I've been craving some date nights with other men....that is, my little men. Sometimes I get so busy with doing life with three little ones that I don't take the time to really just "be" with each of them. I love the moments when it's just you and one of them and they are telling you a story like only a 4 year-old can or when you get to spend a few precious moments rubbing one of their backs before bedtime. But, lately I've been thinking that I'd like more! I would love to spend an entire evening with each of them...just them and Mommy. Go to dinner, get some ice cream, push each other on the swings at the park. 

So, I'm going to work on that...getting a date with each of my amazing boys. I'm not sure what that looks like with an 8 month old, but we'll figure something out! HA! I am also going to work on my hubs getting time with each of them as well. It's so important for daddies to have that time with boys!! MAN! Maybe it will be once a month with each of them....maybe one month is with Mommy and the next is with Daddy? Still working through the details.

All I know is it's time to revamp date night and give the boys some space to be themselves and not have to share me or Chris with anyone else! What a treat! And I'm looking forward to those moments when they open up their little worlds to me and I get the opportunity to speak LIFE and JESUS to them without any distractions. In the day to day chaos and loudness of life I forget how AMAZINGLY COOL my boys are...they are funny, unique, smart, feisty, and fun!! I want to me more like them when I grow up!

Here's a pic from my iphone...ha...of me and Micah on a date at Whole Foods in Austin! Such a fun night together! We laughed and really talked and it felt so peaceful. I remember saying, "Micah, you're my friend and I love you!" I really LOVED being his friend that night! He's so cool!!!

An Otts' Family Staple!!

Pesto Pasta has become a regular STAPLE at the Otts' house!! It's really easy to make and it is great left over!
Try it out!!
You can change it up by adding veggies. We normally put cherry tomatoes in there. You could definitely do something like zucchini or squash or even some fresh spinach! YUM!
ENJOY!! From our family to yours...
Ingredients:
Bowtie pasta
Feta cheese
5 handfuls of basil
Grated Parmesan
Lemon juice (about one)
Salt and Pepper to taste
Toasted pine nuts (1/4-1/2 a cup)
Olive oil (about a cup total)
Garlic ( I use one large clove so it's not too much for the boys)
Directions:
Put basil, garlic, parmesan, lemon juice, salt, pepper, pine nuts, and a little olive oil into a food processor.
Combine until it's sort of like a paste
Slowly add more olive oil while you pulse the processor until it becomes smooth and creamy, but not too thick.
Do a taste test...sometimes I add more salt, lemon, basil, whatever...until it tastes right to me!

* You can also make the pesto with spinach instead of basil or even make a spicy arugula pesto! YUM!

So, I found out that Mary Beth Chapman wrote a book recently and put it on my "to read" list...but then earlier this week I woke up really feeling like I should go out and buy this book and start reading it. Two days later I had finished the book and it's been on my mind ever since. It's such an amazing story!! So sad, but at the same time so hopeful. I was left feeling brokenhearted, but also so hungry to see heaven!! To live every day longing for heaven...to have my greatest desire be to see Jesus face to face...to love people into the kingdom out of a place of really believing that heaven is real. This book wrecked me...literally weeping bucket loads as my three-year-old looks at me oddly and asks, "Why do your eyes have boo-boos, mama?" HA!

READ THIS BOOK!! It's a really honest story of believing and trusting God no matter the trial or circumstance. It has impacting me tremendously...and I'm still figuring out exactly why?! It's that good...

Also, check out the Chapman's organization called Show Hope! It's really great what they are doing with orphan care and adoption.

Picky Eaters Anonymous...

So, my boys are picky eaters...mostly my oldest Micah is and as the oldest this has thus made my middle son, Gavin, a little picky as well. My very creative sister-in-law had a great idea for her oldest...a food chart! You list the new foods you are trying and then put pictures of them. You also post pictures of things they know they like...because a 4-year-old can be fickle and sometimes forget what they like. HA! So, I've made a chart!! YAY!
 I've also made a rewards system where they get a sticker for each new food they try (they have to eat all of it!). When they get 10 stickers...they get a prize. It's been a good incentive and it's also teaching Micah the idea of working towards something and having a goal, which is great since he is often into immediate gratification...who isn't, right?! So, I'll keep you posted on how it goes...if you have any suggestions of things to add let me know!! (Sorry for the blurry pics...they are from my iphone!)

The last board will be for us to move things to when they decide if they like them. Each new food gets 3 tries before they decide for sure!

3 Point Pumpkin Muffin Recipe!!!

So, I'm not really hard core doing Weight Watchers right now, but I love their recipes and I feel like it's a good way to monitor the things I eat without being on a "diet." It's more about making healthy substitutions and such. I made these this morning and they were super yummy! I would maybe add some roasted pumpkin seeds on top next time like the Starbucks pumpkin bread...which by the way has 390 calories and 15g of fat!!! WOW!! Try these out...I promise your bum will thank you!!
Grandma's Pumpkin Muffins

3 Points each, makes 12 muffins

Ingredients
PAM baking cooking spray
2 cups all-purpose flour
1 Tbsp baking powder
1 tsp salt
1 tsp baking soda
1/2 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg
2/3 cup unsweetened applesauce
1 cup canned pumpkin
2/3 cup sugar
1/2 cup fat free egg substitute
2/3 cup fat free milk



Directions
Preheat oven to 400 degrees. Coat muffin tin with cooking spray or use liners (if using liners...spray the inside as well just to be sure...mine stuck to the paper).
Combine flour, baking powder, salt, baking soda, cloves, cinnamon, and nutmeg in a large bowl.
Combine applesauce, pumpkin, sugar, egg substitute, and milk in a smaller bowl. Stir well.
Add applesauce mixture to the flour mixture and mix until combined.
Pour batter into muffin tins until 2/3 full or so. Bake for anywhere from 18-22 minutes...depends on amount of mix in tin and oven variations. Best to just check on them with a cake tester.

"Give Me All Your Money!"

So, we're driving in the car last night and I start off on one of my usual rants about something pointless. Chris says, "You should blog about this...it's funny!" So, here's my rant written in type...we'll see if it translates. HA!


I've decided that I really despise places like Peter Piper Pizza or Chuck E. Cheese's. Which, I know, will upset some people...people I'm related to in fact! (Gee...you are welcome to take our boys to Chuck E. Cheese whenever you want! Promise.) But, really these places are designed for one purpose...to STEAL YOUR MONEY!!


They create games that are way too hard for my 4-year-old to win, but nevertheless he wants to play them OVER and OVER again. All in the hopes that he'll win enough tickets to somehow buy himself some piddly Oriental Trading Company toy that will inevitably end up lost under a car seat or chewed up by our one year-old labradoodle, Charlie. What?? Really?


I mean, I could go online and order a mixed pack of little plastic toys for like $10, but we just spent $45 on crummy pizza, a soda that spilled all over the table, and exactly 2 plastic spider rings!! Does that make sense? NOOOOOO!


So, I don't like these places...there, I've said my piece. I'm done.


Except....have you thought about all those kids in that nasty ball pit thing? I mean kids you don't know...with boogers and dirty diapers...all those "pee balls" and your kid is crawling around in there like it's the coolest thing he's ever seen. I'm just sayin'....

On the subject of "BOY MOM"

I have recently come to grips with the fact that I am a BOY MOM...in fact, I'm sort of falling in Love with the idea. I'm loving that I have this really unique role of raising three little men and that I have an amazing opportunity to show them how to love and treat the women in their lives. It's an honor to think that the things I teach them will make them better friends, husbands, fathers, leaders, etc. WOW! What an opportunity to really impact the world!!

It's amazing and very scary all at the same time. It makes me want to know Jesus so well that His voice is constantly whispering into my ear the right words, the right reaction, the right encouragment for every little moment that comes my way.

So, I'm embracing my BOY MOMhood. No, pretty pink in this house except for on mama! We're going to play soccer, learn how to rock climb, get some canoes, go camping, go on adventures, maybe join cub scouts, tackle each other, growl a lot, who knows?! Heck, I named my youngest Sawyer Bear after Bear Grylls...so I think it's safe to say we're lovin' our amazing family of strong courageous men!!! We're going to be a BOY family and that's quite alright with me!!!!!!
